Emulsions

Oils do not in water. Generally the low density oil sits on top of the water. They can be made to mix to produce an emulsion. An emulsion is a mixture of two , one finely dispersed in the other.

Emulsions are than oil or water themselves and have many uses that depend on their special properties. They provide better , and , for example in salad dressings and ice creams.

An emulsion can be made by (shaking or stirring) the liquids together. These emulsions are rarely stable. A stable emulsion is one that doesn't out when left alone. In order to create a more stable emulsions, are used.

An example of a household emulsifier is washing up liquid, which allows oil from plates etc to form an emulsion with the water in the sink. Emulsifiers are also found in the form of food additives.
